Good change of our Canadian bread flour

One of the best
After trying out a huge number of flours over the last two years I came to the conclusion that the Canadian Marriages very strong was the best we could get in the UK.However I must say that this flour is very comparable. It may even be the same stuff in a different packaging - I don’t know? But I do know that given the price which is a few pounds cheaper, then this flour is likely in the top 3 of the brands we can get in the UK.It has excellent properties. The sourdough loaf I made this week was nothing short of excellent.Talking of sourdough, it is so easy to make. It takes just 3 days. Take an old jam jar, get wo tablespoons of this flour, mix in water, make the consistency just like the consistency of toothpaste, cover with a piece of cloth like a tea towel and put an elastic band around it to keep it safe. Next day take out half the mixture and put new flour in and water and mix again to the same consistency. The next day there should be bubbles throughout the mixture and if it smells very much like yoghurt - it’s worked. Take out half the mixture again and put it in your regular dough mix and leave overnight. In the morning you will have your first sourdough loaf risen. Then knock back gently and leave to rise again - then bake. Done.Keep your starter alive by replenishing the flour and water and take out enough for the next loaf. No need for yeast ever again. Happy days.

1st class flour
Having been let down by my usual mill, for my normal Canadian flour(ordered on 5th dec and still no sign) I thought I'd try this flour. Cheaper and milled relatively locally.Win win for me.What can I say that my photos don't tell you?Malted loaves with egg wash and wheat flakes.5 hour sour dough loaves.Both as good as I've ever made.I guess I'll be sticking with this flour from now on.

Good flour
Normally use Marriages but thought I’d try this. Lovely quality and makes a great sourdough loaf, and sourdough discard loaf. Nicely packed, fast delivery.Recommended!

Hit and miss
Makes quite dense bread. Not good if you want light fluffy bread. Used in bread machine. Had to be very precise with liquid temperature to achieve a satisfactory loaf. Won't use again. Doesn't compare to Heygates or marriages.

Delivery Failure - Update 1.
Impossible to rate product as Amazon delivery has not arrived, lost between Bristol to Exeter? Delivery made better late than never, by private car.Product looks fine all packaging good flour seems good, proof will be in the baking!
