I bought this Pro Chef 8" knife because I wanted to see what you get at this price for an AUS-10V knife. So far I am not disappointed. Extremely sharp and holding a great edge after almost daily use for the last two months. So here are the realities: it is a lighter weight of steel and most likely the tempering is not the same as a professional grade AUS-10V knife. My wife and I actually like the lightness for an everyday go-to knife. The inexpensive handle is not the most ergonomic but still very acceptable. The full tang is not completely flush with the handle in a couple of spots but just minimally noticeable and is not really an issue for our everyday home use. Easily cuts very thin slices of fruits and vegetables, and does a great job with meats like fish, chicken or beef. Cutting bones is out of the question. Do I recommend it? Absolutely if you're okay knowing you're not getting a top of the line AUS-10V knife but a great value none the less. If you have exacting standards or are a professional, then you know you need to shell out ~$100 or more. I have those too but this one is a welcomed addition to our collection.
